Some decafs taste like a compromise. This one tastes like peaches.

Grown by brothers Diego and Alex Bermúdez at Finca El Paraíso in Piendamó, Cauca, this Castillo lot is famous for a reason. After a 36-hour anaerobic fermentation in cherry, the coffee goes through a second 12-hour co-fermentation with a yeast strain the Bermúdez brothers developed themselves, then a hot and cold thermal shock that locks the aromatics into the bean. Only after all that does it get decaffeinated with sugarcane ethyl acetate, which keeps the fruit intact. Our light roast lets it speak for itself.

Tasting notes: white peach, lychee, rosewater

Brew it as a pour over and drink it any hour you like. It’s the kind of cup that makes people ask whether it’s really decaf.
