Sourcing.
We source from the same farms and producers as the best specialty coffee roasters in the world. No compromise on origin or quality just because the caffeine will be removed later. The bean has to be exceptional before anything else happens.

Decaffeinate
The decaffeination process is the final layer. We carry both EA and Swiss Water processed coffees because we believe you deserve a genuine choice between maximum flavor and maximum purity.
Roast
Decaf beans undergo structural changes during the decaffeination process, which means they respond to heat entirely differently than a regular bean. Apply the same roast profile and you flatten the flavor. We spent years building profiles specific to decaf, learning how much heat and time each batch needs to produce the same depth, sweetness, and character as the best caffeinated coffee. It is the hardest thing we do. It is also the part we are most proud of.

Ethyl Acetate
EA (ethyl acetate) preserves more of the bean's natural flavor character, the preference of most specialty-focused roasters.
Swiss Water Process
Swiss Water is completely chemical-free, using only water to remove the caffeine, with a cleaner and slightly softer result. We love both equally and carry both always.
