Direct‑sourced from Finca El Vergel, a family‑owned estate in Tolima, Colombia, tended by the Bayter family—Elias, Shady, and their mother Martha. This duo has nurtured the farm since 1995 and, guided by coffee pioneer Miguel Jimenez, transitioned from avocados into specialty coffee by 2016.
The beans—Red & Yellow Caturra varietals—are decaffeinated at origin using the natural sugarcane (ethyl acetate) process, preserving sweetness while reducing caffeine to ~0.1%. Before decaffeination, the beans undergo anaerobic fermentation and sun-drying to develop deep, chocolatey complexity.
