After a 36-hour anaerobic fermentation in cherry, the coffee goes through a second 12-hour co-fermentation with a yeast strain the Bermúdez brothers developed themselves, then a hot and cold thermal shock that locks the aromatics into the bean. Only after all that does it get decaffeinated with sugarcane ethyl acetate, which keeps the fruit intact.
